Low Carb Diabetic Diet

Gingerbread Recipe


1 1/2 cups all-purpose flour

3/4 teaspoon ground ginger

3/4 teaspoon ground cinnamon

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup shortening

1/4 cup packed brown sugar

1 egg

1/2 cup light molasses

1/2 cup boiling water

Oven 350o



Grease and lightly flour two 9x1 1/2-inch round baking pan. Combine the first 6 ingredients. In a mixer bowl beat shortening on medium speed of electric mixer about 30 seconds. Add brown sugar; beat till fluffy. Add egg and molasses; beat 1 minute, beating after each addition. Turn into prepared pan. Bake in a 350o oven 30 to 35 minutes or till done. Cool 10 minutes on a wire rack. Remove from pan; serve warm. Makes 8 servings.
