Cranberry Orange Muffins Recipe |

Ingredients: 1/3 cup chopped dried cranberries 1/3 cup plus 2 tablespoons sugar, divided 3 tablespoons boiling orange juice or water 1 3/4 cups all-purpose flour 1/2 cup yellow cornmeal (or 1/3 cup more all-purpose flour) 2 1/2 teaspoons baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1/2 cup egg substitute (or 1 whole egg and 1 egg white, beaten) 1 cup plus 2 tablespoons nonfat buttermilk 2 tablespoons canola oil 2 teaspoons freshly grated orange rind
Method: Combine cranberries and 2 tablespoons sugar in a small bowl, mixing well. Stir in boiling orange juice or water; set aside for 15 minutes to softened cranberries.
Preheat oven to 400o. Combine cornmeal flour, cornmeal, remaining 1/3 cup sugar, baking powder, baking soda, and salt. In another bowl, combine egg substitute, buttermilk, oil and orange rid, mixing well. Add cranberry mixture, stirring just until combined.
Spoon batter evenly into muffin cups coated with cooking spray. Bake for 15 minutes or until golden. Let cool in pan 2 or 3 minutes; serve warm.
