Cinnamon Orange Scones Recipe

Ingredients:

2 1/2 cups sifted cake flour

1 1/2 cups quick-cooking oats

1/3 cup sugar

2 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

2 teaspoons grated orange rind

1 teaspoon ground cinnamon

1/4 sup stick margarine (or butter), cut into pieces and frozen

1 cup nonfat buttermilk

3 egg whites

1 tablespoon sugar

1/4 teaspoon ground cinnamon

vegetable cooking spray

 

Method:

Preheat oven to 400o. Combine flour, oat, 1/3 cup sugar, baking powder, baking soda, salt, orange rind, and 1 teaspoon cinnamon in a food processor; cover and process until oats are ground. Sprinkle margarine pieces evenly over mixture; pulse until mixture forms coarse crumbs. With a spatula or spoon, turn mixture out into a bowl.

 

Combine buttermilk and egg whites; beat until smooth. Make a well in center of flour mixture; add buttermilk mixture and stir just until moistened. Turn out a lightly floured surface; pat dough to 1-inch thickness. Cut into 12 rounds using a 2-inch cutter, re-rolling scraps as needed.

 

Arrange rounds on a baking sheet coated with cooking spray. Coat tops of scones with cooking spray. Combine 1 tablespoon sugar and 1/4 teaspoon ground cinnamon; sprinkle evenly on scones. Bake for 15 minutes or until golden brown. Serve warm.
