Farmer's Breakfast Recipe

Ingredients

1/2 cup chopped onion

1/4 cup butter or margarine

2 medium potatoes, peeled and finely chopped (2 cups)

1 tsp water

6 eggs

2 tbsp milk

1 cup diced fully cooked ham

 

Method

In a 10-inch skillet cook onion in butter or margarine till tender.  Add potatoes, water, and 1/4 tsp salt. Cover ad cook over medium heat about 10 minutes or till potatoes are tender, stirring occasionally. Beat together eggs, milk, 1/4 tsp salt, and dash pepper; stir in ham. Pour over potato mixture/ Cook, without stirring, till mixture begins to set on the bottom and around edges. Using a large spoon or spatula, lift and fold partially cooked egg mixture so uncooked portion flows underneath. Continue cooking over medium  heat about 4 minutes or till eggs are cooked throughout but still glossy and moist. Serve immediately. Makes 4 servings.
