Creamy Cheese Grits

Ingredients:

3 cup skim milk

3/4 cup regular (not quick-cooking) grits, uncooked

dash of salt

?cup finely minces reduced-fat Canadian bacon (about a quarter pound)

?cup reduced-fat ricotta cheese

3 egg whites, beaten

1 tablespoon stick margarine (or butter), melted

1 cup ( 4 ounces) shredded reduced-fat Cheddar cheese, divided

vegetable cooking spray

 

Method:

Preheat oven to 325O. Bring milk to a boil in a heavy, medium saucepan; gradually stir in grits and salt. Return to a boil; cover, reduce heat, and simmer 10 to 15 minutes or until very thick, stirring occasionally. let cool. Stir in Canadian bacon, ricotta cheese, egg whites, margarine, and 1/2 cup Cheddar cheese until well blended

 

Pour mixture in a 1-quart casserole coated with cooking spray; bake for 35 to 40 minutes or until set. Sprinkle with cheese;  continue baking 2 minutes.

 

Per serving: 250 calories, 8 g fat (4g saturated), 33 mg cholesterol, 530 mg Sodium, 21 g protein, 24g carbohydrates
