Country-Style Sausage Patties Recipe

For a nice change of pace, make these in the Italian style, with a slight variation in the spices. Instead of the quantities of rubbed sage, thyme, and marjoram, substitute one teaspoon dried thyme, one teaspoon fennel seeds, and a half teaspoon rubbed sage. You might also want to increase the amount of red ground pepper from a fourth to a half teaspoon.

 

Ingredients

10 ounces lean ground pork

10 ounces lean ground turkey

1 slice bacon, minced
1 clove garlic, finely chopped
2 teaspoons rubbed sage
1 1/2 teaspoon dried thyme

1/2 teaspoon dried marjoram

1/2 teaspoon salt
1 1/2 teaspoon freshly ground pepper
1/4 teaspoon ground red pepper

vegetable cooking spray

 

Method:

Combine all ingredients except cooking spray in food processor fitted with knife blade; cover and pulse until well blended.
Moisten hands with cold water and shape mixture into 16 (3/8-inch thick) patties.
Coat a large nonstick skillet with cooking spray; place over medium heat until hot. Cook patties in batches 10 to 15 minutes or until browned and cooked, turning frequently.
