Cheese and Herb Omelet Recipe

Ingredients

1 tbsp butter or margarine

1 tbsp all-purpose flour

1/3 cup milk

1 tsp snipped chives

1.4 tsp dried fines herbs

1/2 cup shredded Gruyere cheese (2 ounces)

1/4 cup dairy sour cream

2 tbsp dry white wine

Puffy Omelet

 

Method

In a small saucepan melt butter or margarine; stir in all-purpose flour. Stir in milk, snipped chives, and fines herbs. Cook and stir till mixture is thickened and bubbly. Cook and stir 1 to 2 minutes more. Stir in shredded cheese till melted. Stir in sour cream, and wine; heat through but do not boil. To serve, pour over folded Puffy Omelet on a warm platter. Garnish with parsley, if desired. Makes 2 servings.
