Whole Wheat Bread Recipe

Ingredients:

3 to 3 1/2 cups all-purpose flour

2 cups whole wheat flour

1 packages active dry yeast

1 3/4 cup water

1/3 cup packed brown sugar

3 tablespoon shortening

2 teaspoon salt

Oven 375o

 

Method

In  a large mixer bowl combine 2 cups all-purpose flour and active dry yeast. Heat water, brown sugar, shortening, and salt just till warm (115o to 120o), stirring constantly. Add to flour mixture. Beat at low speed of electric mixer 1/2 minute, scraping bowl. Beat 3 minutes at high speed.

 

Stir in as much whole what flour and as much of 1 to 1 1/2 cups all-purpose flour as you can mix in with a spoon. On a lightly floured surface knead in enough remaining all-purpose flour to make a moderately stiff dough (6 to 8 minutes total). Shape into a ball in a lightly greased bowl; turn once. Cover; let rise in a warm place till double (about 1 to 1 1/2 hours).

 

Punch dough down, turn out onto a lightly floured surface. Divide in half. Cover; let rest 10 minutes. Shape into loaves; place in 2 greased 8x4x2-inch loaf pans. Cover the loaves with foil the last 20 minutes to prevent overbrowining. Makes 2 loaves.
