White Bread (Conventional Method) Recipe

Ingredients:

1 package active dry yeast

1/4 cup warm water (110o to 115o)

2 cups milk

2 tablespoons sugar

1 tablespoon shortening

2 teaspoons salt

5 3/4 to 6 1/4 cups all-purpose flour

Melted butter

 

Method

Soften yeast in warm water. In a saucepan heat milk, sugar, shortening, and salt just till warm (115o to 120o) and shortening is almost melted; stir constantly. Turn into a large mixing bowl. Stir in 2 cups of the flour; beat well. Add the softened yeast; stir till smooth. Stir in as much of the remaining flour as you can mix in with a spoon. Turn out onto a lightly floured surface. Knead in enough of the remaining flour to make a moderately stiff dough that is smooth and elastic (6 to 8 minutes total). Shape into a ball. Place in a lightly greased bowl; turn once to grease surface. Cover; let rise in a warm bowl; turn once to grease surface. Cover; let rise in a warm place till double (about 1 1/4 hours).

 

Punch down; turn out onto a light floured surface. Divide dough in half. Cover; let rest 10 minutes. Lightly grease two 8x4x2-inch loaf pans. Shape each half of dough into a loaf. Place in pans. Brush loaves with some melted butter or margarine. Cover; let rise in a warm place till nearly double (45 t0 60 minutes). Bake in a 375o oven about 45 minutes or till bread tests done. Test by tapping the top with your knuckles. A hollow sound means the load is properly baked. Remove from pans; cool on a wire rack. Makes 2 loaves.

 

Notes: To make bread in advance, prepare dough for White Bread, using either the conventional or easy-mix method. After dough had rise, shape each ball of dough into a load and place in pans. Cover loaves loosely with clear plastic wrap. Refrigerate up to 24 hours. When ready to bake, remove bread from refrigerate and uncover. Brush with some melted butter or margarine. Let stand in a warm place till loaves nearly double; puncture any surface bubbles with a wooden pick. Bake as above.
