Spoon Bread Recipe

Ingredients:

2 cups milk

1 cup yellow cornmeal

1 cup milk

2 tablespoons butter or margarine

1 teaspoon of salt

1 teaspoon baking powder

3 beaten eggs

3 stiff-beaten egg white

Butter or margarine

Oven 325o

 

Method

In a saucepan stir 2 cups milk into cornmeal. Cook, stirring constantly, till very thick and pulling away from sides of pan. Remove from heat. Stir in 1 cup milk, 2 tablespoons butter or margarine, salt, and baking powder. Stir about 1 cup of the hot mixture into egg yolks, return into a greased 2-quart casserole. Bake in a 325o oven about 50 minutes or till a knife inserted near center comes out clean. Serve immediately with butter or margarine. Makes 6 servings.

 

Cheese Spoon Bread:

Prepare Spoon Bread batter as above, except 1/2 cup grated Parmesan Cheese (2 ounces) into cooked cornmeal mixture with the 2 tablespoons butter or margarine.
