High-Rise Buttermilk Biscuits Recipe

Ingredients:

1 1/2 cups all-purpose flour

1/3 cup sugar

 1/3 cup nonfat buttermilk

1 1/2 cups mashed overripe bananas

1 large egg

1 large egg white

3 tablespoons canola oil

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1/2 cup oat bran cereal

1 1/4 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

vegetable cooking spray

 

Method

Preheat oven to 425o. Combine all dry ingredients in a fine wire-mesh sieve; sift into a large bowl. Cut in margarine until mixture forms coarse crumbs. Make a well in center of mixture; stir in buttermilk until mixture forms a ball.

 

Knead dough on a lightly floured surface 4 or 5 times; pat into a rectangle about 1 inch thick. Cut biscuits with a 2-inch round cutter; place on a baking sheet and bake for 10 to 11 minutes or until golden. Serve warm.

 

Note: If desired, 2 cups all-purpose flour may be used instead of 1 1/2 cups all-purpose flour and 1/2 cup whole wheat flour.
