Dinner Rolls Recipe |

Ingredients: 4 to 4 1/2 cups all-purpose flour 1 package active dry yeast 1 cup milk 1/3 cup sugar 1/3 cup butter, margarine, or shortening 1 teaspoon salt 2 eggs Oven 375o
Method In a large mixer bowl combine 2 cups of the flour and the yeast. In a saucepan heat milk, sugar, butter and salt just till warm (115o to 120o) and butter is almost melted; stir constantly. Add to flour mixture; add eggs. Beat at low speed of electric mixer for 1/2 minute; scrape sides of bowl constantly. Beat 3 minutes at high speed. Stir in as much of the remaining flour as you can mix in with a spoon. Turn out onto a floured surface. Knead in enough of the remaining flour to make a moderately soft dough (6 to 8 minutes total). Shape into a ball. Place in a greased bowl; turn once. Cover; let rise in a warm place till double (about 1 hour).
Punch down; divide dough in half. Cover; let rest 10 minutes. Shape into desired rolls. Cover; let rise till nearly double (about 30 minutes). Bake in a a 375o oven 12 to 15 minutes or till golden. Makes 2 to 2 1/2 dozen rolls.
Brown-and-Serve Rolls:Prepare Dinner Rolls as above. Shape into desired rolls. Cover; let rise till nearly double (about 30 minutes). Bake in 325o oven about 10 minutes; do not brown. Remove from pans; cool. Wrap, label and freeze.
To serve, open packages containing desired number of rolls. Thaw rolls in package at room temperature for 10 to 15 minutes. Unwrap completely. Bake on ungreased baking sheets in a 400o oven about 10 minutes or till golden.
Hamburger and Frankfurter Buns:Prepare Dinner Rolls as above; let rise till double. Punch dough down; divide into 12 portions. Cover; let rise 10 minutes. For hamburger bunds, shape each portion into an even circle, folding edges under. Press flt between hands. For frankfurter bunds, shape into rolls about 5 1/2 inches long, tapering ends. Place on a a greased baking sheet. Cover; let rise till nearly double (about 30 minutes). Bake in a 375o oven 12 to 15 minutes or till golden. remove buns from sheet; cool. Makes 12 buns.
