Cheese Bread Recipe |

Ingredients: 3 1/2 to 4 cups all-purpose flour 1 package active dry yeast 1 1/2 cups shredded American or Swiss cheese 1 1/4 cups warm water (115o to 120o) 3 tablespoons sugar 1 tablespoon salt 1 tablespoon sugar Oven 375o
Method In a large mixer bowl combine 1 1/2 cups of the all-purpose flour and yeast. Heat American or Swiss cheese, water, sugar, and salt just till warm (115o to 120o), stirring constantly. Add to flour mixture; add 1 egg. Beat at low speed of electric mixer for 1/2 minute, scraping bowl. Beat 3 minutes at high speed. Stir in as much of 2 to 2 1/2 cups all-purpose flour as you can mix in with a spoon.
On a floured
surface knead in enough remaining flour to make a moderately stiff
dough that is smooth and elastic (6 to 8 minutes total). Shape into
a ball in a greased bowl; turn once. Cover; let rise in a warm place
till double (1 to 1 1/4 hours). Punch down; divide in half. Cover; let rest 10 minutes. Shape into 2 loaves; place in greased 8x4x2-inch loaf pans. Cover; let rise till nearly double (about 45 minutes). Bake in a 375o oven for 40 to 45 minutes. Cover with foil the last 20 minutes to prevent overbrowning. Cool on a wire rack. Makes 2 loaves.
