Carrot-Coconut-Cherry Bread Recipe

Ingredients:

2 1/2 cups all-purpose flour

1 cup sugar

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon ground mace

3 beaten eggs

1.2 cup cooking oil

1/2 cup milk

2 cups shredded carrots

1 1/4 cups flakes coconut

1/2 cup chopped maraschino cherries

Oven 350o

 

Method

Stir together flour, baking powder, soda, mace, and 1/2 teaspoon salt. Combine eggs, oil, and milk. Add to dry ingredients; mix well. Stir in carrots, coconut, and cherries. Pour into 3 greased 21-ounce pie filling cans. Bake in a 350o oven for 1 to 1 1/2 hours. (Or, pour batter into one greased 9x5x3-inch loaf pan. Bake in a 350o 45 to 50 minutes.) Wrap and store overnight before slicing. Make 3.
