Black-Tie Dinner Rolls Recipe

Before you make dinner, make this dough, and let it rise. Just before dinner, pop dough balls in the oven, and you'll have nutritious, elegant, delicious dinner rolls.

 

Ingredients:

3 1/4 cups all-purpose flour, divided

3 cups whole wheat flour, divided

1/2 teaspoon salt

2 packages active dry yeast

1 cup skim milk

3/4 cup water

1/4 cup honey

1/4 cup stick margarine (or butter)

2 large egg whites

vegetable cooking spray

 

Method

Preheat oven to 375o. Combine 2 cups all-purpose flour, 1 cup whole wheat flour, salt, and yeast in a large mixing bowl; blend well.

 

Combine milk, water, honey, and margarine in a small saucepan; cook over medium heat until mixture reaches 120o to 130o. Add to flour mixture, and beat at low speed in an electric mixer for 30 seconds, scraping bowl. Increase speed to high and beat 3 minutes. Add egg and whites, and beat until blended. Using a wooden spoon, stir in remaining whole wheat flour and enough of the remaining all-purpose flour until dough becomes difficult to stir.

 

Knead on a lightly floured surfaced about 10 minutes, working in enough of the remaining all-purpose flour to make a smooth, elastic dough. Place dough in a bowl coated with cooking spray; coat dough evenly with cooking spray. Cover with cloth or plastic wrap and let rise in a warm place until double in bulk (about 45 to 60 minutes).

 

Preheat oven to 375o. Punch dough down, and divide into 36 equal portions. Shape into balls, and place on large baking sheets coated with cooking spray. Cover and let rise in a warm place 20 minutes or until doubled in bulk. Bake for 12 minutes or until golden. Remove from baking sheets, and let cool on wire racks.
