Biscuits Supreme Recipe

Ingredients:

2 cups all-purpose flour

4 teaspoons baking powder

2 teaspoons sugar

1/2 teaspoon cream of tartar

1/2 teaspoon of salt

1/2 cup shortening

2/3 cup milk

Oven 450o

 

Method

Stir together flour, baking powder, sugar, cream of tartar, and salt. Cut in shortening till mixture resembles coarse crumbs. Make a well in the center; add milk all at once. Stir just till dough clings together. Knead gently on a lightly floured surface for 10 to 20 strokes. Roll or pat to 1/2 inch thickness. Cut with a 2 1/2-inch biscuit cutter*,  dipping cutter in flour between cuts. Transfer to an ungreased baking sheet. Bake in a 450o oven for 10 to 12 minutes or till golden. serve warm. Makes 10 to 12 biscuits.

 

Buttermilk Biscuits:

Prepare Biscuits Supreme as above, except stir 1/4 teaspoon baking soda into flour mixture and substitute 3/4 cup buttermilk for the milk.

 

Cornmeal Biscuits:

Prepare Biscuits Supreme as above, except use only 1 1/2 cups all-purpose flour and add 1/2 cup yellow cornmeal. If desired, stir 1/4 teaspoon ground sage into flour mixture.

 

Garden Biscuits:

Prepare Biscuits Supreme as as above, except add 2 tablespoons finely chopped carrot, 1 tablespoon finely snipped parsley, and 1 teaspoon finely chopped green onion to flour mixture with the milk; mix well.

 

Sour Cream Biscuits:

Prepare Biscuits Supreme as above, except use 1 cup dairy sour cream and only 2 tablespoons milk.

 

* Note: If you do not have a biscuit cutter, pat the dough into a 1/2-inch-thick rectangle. Cut the dough into squares, triangles, or strips using a sharp knife.
