Banana Oatbread Recipe |

|
When your bananas are too ripe to slice into cereal, bake them into this delicious bread. If you don't have oat bran cereal, substitute regular whole oats, ground in a food processor until fine.
Ingredients: 1/3 cups firmly packed light brown sugar 1/3 cup sugar 1/3 cup nonfat buttermilk 1 1/2 cups mashed overripe bananas 1 large egg 1 large egg white 3 tablespoons canola oil 1 teaspoon vanilla extract 1 1/2 cups all-purpose flour 1/2 cup oat bran cereal 1 1/4 teaspoons baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1 teaspoon ground cinnamon vegetable cooking spray
Method Preheat oven to 350o. Combine sugars and buttermilk in a large bowl; mix until sugar dissolves. With a wire whisk, stir in bananas, egg, egg white, canola oil, and vanilla extract.
Combine dry ingredients in a fine wire-mesh sieve; sift over banana mixture. Stir just until dry ingredients are moistened.
Pour into a 9-x 5- x 3-inch baking pan; bake for 40 to 50 minutes or until wooden pick inserted in center comes out clean. Let cook in pan 10 minutes; remove from pan and cool completely on a wire rack.
