Banana Oatbread Recipe

When your bananas are too ripe to slice into cereal, bake them into this delicious bread. If you don't have oat bran cereal, substitute regular whole oats, ground in a food processor until fine.

 

Ingredients:

1/3 cups firmly packed light brown sugar

1/3 cup sugar

 1/3 cup nonfat buttermilk

1 1/2 cups mashed overripe bananas

1 large egg

1 large egg white

3 tablespoons canola oil

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1/2 cup oat bran cereal

1 1/4 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

vegetable cooking spray

 

Method

Preheat oven to 350o. Combine sugars and buttermilk in a large bowl; mix until sugar dissolves. With a wire whisk, stir in bananas, egg, egg white, canola oil, and vanilla extract.

 

Combine dry ingredients in a fine wire-mesh sieve; sift over banana mixture. Stir just until dry ingredients are moistened.

 

Pour into a 9-x 5- x 3-inch baking pan; bake for 40 to 50 minutes or until wooden pick inserted in center comes out clean. Let cook in pan 10 minutes; remove from pan and cool completely on a wire rack.

 

Per serving: 29 g carbohydrates, 165 calories, 4 g fat (1 g saturated), 18 mg cholesterol, 210 mg sodium, 3 g protein
