Ingredients: 6 1/4 to 6 3/4 cups all-purpose flour 1/2 cup cornmeal 2 packages active dry yeast 1/2 cup dark molasses 1/2 cup shortening 2 eggs Oven 375o
Method Combine 3 cups flour, cornmeal, and the yeast. Heat molasses, shortening, 2 cups water, and 1 tablespoon salt just till warm (115o to 120o); stir constantly. Add to flour mixture; add eggs. Beat at low speed of electric mixer for 1/2 minute; scrape sides of bowl constantly. Beat 3 minutes at high speed. Stir in as much of the remaining flour as you can mix in with a spoon.
On a floured surface knead in enough of the remaining flour to make a moderately soft dough (3 to 5 minutes total). Shape into a ball. Place in a greased bowl; turn once. Cover; let rise in a warm place till double (about 1 to 1 1/4 hours). Punch down; turn out onto a lightly floured surface. Divide into half. Cover; let rest 10 minutes.
Grease two 9x5x3-inch loaf pans. Shape dough into 2 loaves; place in pans. Cover; let rise till nearly double (45 to 60 minutes). Bake in a a 375o oven 35 to 40 minutes. Makes 2.
