Inspect each home-canned jar carefully before serving.

Detecting the presence of microorganisms is a matter of using your eyes, nose, and good sense. If the jar has leaked, shows patches of mold, or has a foamy or murky appearance, discard the food.

The odor from the opened jar should be pleasant and characteristic of the product canned. If the food doesn’t look  or smell right, don’t use it. Some harmful toxins do not change the appearance or smell of home-canned vegetables and meats, although an off-odor may show up when the product is boiled. If you have any doubts, destroy the food.

Fortunately, these toxins are destroyed by boiling the food for 10 to 20 minutes (20 minutes for corn and spinach). If the product looks and smells good after the suggested boiling time, it’s safe to eat. Never taste low-acid foods cold from the jar.

Fudge and fondant will stay fresh and creamy for several weeks if tightly wrapped in waxed paper, foil, or clear plastic wrap. Store the wrapped candy in airtight container in a cool, dry place.

  1. Stud orange, lemon, or lime slices with whole cloves and float atop punches.

When you don’t have any buttermilk on hand, substitute an equal amount of  “soured” milk for the buttermilk.

Chill or freeze the food quickly. Use refrigerated  foods within 24 hours or within the time given in the recipe to avoid loss of flavor and quality.

For appetizer juices:

For a light and nonfilling appettizer serve a small glass of juice. Try an icy-cold fruit juice garnished with fresh fruit or a mint sprig. Or, heat fruit juice (or mixture of fruit juices) with cloves and stick cinnamon for a warming appetizer.

Vegetable juices such tomato, carrot, or vegetable juice cocktail served cold or hot also are excellent meat starters. If desired, add herbs, seasoned salt, Worcestershire sauce, or bottled hot pepper sauce for extra spiciness.

Snacks are very important in the diet of insulin dependent diabetics, especially those on twice-a-day regimes, since calories must be provided at regular intervals to balance the  glucose lowering action of injected insulin.

For this reason diet prescriptions for those with IDDM usually specify 3 meals and 3 snacks. It is also a good idea for those with NIDDM on tablets to divide their calories throughout the day rather than to eat three large meals, which may require large surges of  insulin.
Timing of snacks is usually mid-morning, mid-after-noon, and pre-bed.

Calorie content and composition of the snack will vary with the total calorie allowance, and the dose and timing of’ insulin injections, as well as activity at different times of the day. For example, someone who is overweight may
need only a glass of skim milk as a mid-morning snack, whereas a thin adolescent may require a bowl of noodle or a tuna sandwich plus a glass of  milk.

On days when exercise is done after work, a large snack at mid-afternoon may be necessary to offset hypoglycaemia.

How to prevent royal icing from discoloring and becoming too hard?

  • Beating in one teaspoon of glycerine for 450 g icing sugar used will stop royal icing from hardening too much. To prevent discoloration, cover the fruitcake with marzipan before icing.
  • Be sure not to over-knead marzipan as this may cause oil to surface which could also discolor the icing.
  • Roll out marzipan between sheets of plastic wrap to prevent cake crumbs catching in marzipan and, when placing marzipan on cake, be careful not to get any apricot jam on the surface of the marzipan.
  • Allow marzipan to dry out a little before applying royal icing.
  • Apply icing in two to three layers, the first two thin and the third one thick.
