Cooking nutritious appetizing meals quickly and without fuss is easy if you plan ahead. And when you’re short on time, you can speed up your food preparation even more by using the following hints :

General tips

  • For a quick garnish or for use in recipes, toast chopped nuts or coconut in a shallow baking pan in a 350 degree oven for 5 to 10 minutes or till browned, stirring once or twice. Cool the nuts or coconut; seal in plastic bags or freezer containers; label and freeze.
  • Shred American, cheddar, Swiss or mozzarella cheese in batches to save time and effort. Plan you menus ahead and shred the amount of cheese you’ll need all at once. Seal it in plastics bags, then label and chill.
  • Chill foods quickly by placing the, in your freezer for 20 to 30 minutes.
  • Keep a supply of hard-cooked eggs in  your refrigerator to use in recipes. Hard-cooked eggs will remain fresh for up to 1 week in your refrigerator.
  • When you need a sauce on the spur of the moment, heat a can of undiluted condensed cream of mushroom, cream of celery, cream of chicken, cream of shrimp, cream of onion, cheddar cheese, or tomato soup.

Here are some handy rules of thumb to determine how much raw chicken to buy for a given amount of cooked chicken.  Two whole chicken breasts (10 ounces each) yield about 2 cups of cubed or chopped cooked chicken. A 2 1/2 to 3-ound broiler-fryer chicken yields about 2 1/2 cups chopped cooked meat, and a 3 1/2-pound roasting chicken provides about 3 cups cooked meat.

A greenish ring around the yolk of a hard-cooked egg is a common, harmless occurrence  caused by the formation of iron sulfide. To lessen the possibility of such rings forming, carefully watch the cooking time and immediately cool eggs.

Place 6 eggs in shells in a large saucepan; add enough water to cover eggs. Bring to a rapid boil over high heat. Reduce heat so water is just below simmering; cover. For soft-cooked eggs, cook 4 to 6 minutes. For hard cooked eggs, cook 15 to 20 minutes. Pour off water. Serves 3.

For soft cooked eggs , add cold water just till eggs are cool enough to handle. Cut off tops and serve in egg cups. (Or, remove egg from shell by cutting egg in half and scooping out the egg into a dish.)

For hard cooked eggs, fill a saucepan with cold water and let stand at least 2 minutes. To quickly cool, add a few ice cubes.

To remove shell of hard-cooked eggs, gently tap warm egg on a counter top; roll egg between palms. Peel off the eggshell, starting at large end.

1. Minimum heat: high temperature affect food values. Foods should be tenderized but not overcooked. A favored method is to cook until moderately tender.

2. Minimum water: Some minerals are water soluble and will vanish when fodds are cooked in too much water. Use as little water as possible.

3. Minimum Air Exposure: Wherever possible, plunge foods into boiling water quickly and then cover the cooking vessel with a lid. This avoids oxidation and conserves Vitamin A and C.

4. Minimum Trimming: Some fruits and vegetables have to be trimmed before cooking, so the wise step is to cook them as quickly as possible after exposing their surfaces.

How To Remove A Piece Of Crumb-Crust Pie?

Just before serving, rub the outside of the filled pie plate with a warm, damp towel. This softens the butter in the crust, making it less likely to stick to the pie plate.

To prepare the towel, rinse it in very hot water, then wring it well.

This procedure is not necessary for crumbs crust that have been baked, since they slide out easily.

Using a meat thermometer

Because no two roasts are shaped exactly alike or have the same amount of bone or fat, a meat thermometer is your best guide to judging doneness. To use the thermometer correctly, insert it into a roast so that the bulb of the thermometer rests in the center of the thickest portion of meat. It should not rest in fat or on the bottom of the roasting pan, or touch bone.

Roast meat till the desired internal temperature is reached. To check the temperature, push the thermometer into the meat a little farther. If the temperature drops, continue cooking the meat to the desired temperature.

For easier carving, allow the meat to stand 15 minutes. During this time, the meat will continue cooking. Therefore, larger roasts should be removed from the oven when the meat thermometer registers about 5 degree  the specified internal temperature.  However, the thermometer should register the correct temperature when you carve the meat.

  • Select fresh, ripe, yet firm fruit. Sort fruit according to size and ripeness to ensure even cooking during processing.
  • Wash fruit gently and thoroughly under cold running water. Or, wash in several changes of water, lifting fruit out of the water each time so dirt doesn’t settle on it/
  • Treat certain fruit (those that darken easily, such as apricots, peaches, and pears) with ascorbic acid color keeper during preparation. Follow package directions for the proportions of color keeper to water. Or, use a solution of 2 tablespoons salt and 2 tablespoons lemon juice per gallon of water. Drain fruit thoroughly.

Here’s how to beat egg whites and identify the three phrases. Place the egg whites in a deep, straight-sided bowl. Use a wire whisk, rotary beater, or electric mixer for beating air into the whites.

Foamy-stage egg whites: Slightly whipping forms large air bubbles in the egg whites, making the mixture fluid and transparent.

Soft-peak-stage egg whites: With a bit more beating , the bubbles become smaller and the foam becomes less transparent. The foam turns white and becomes stiffer, sot that soft peaks will form when the beaters are lifted out of the bowl. The tips of the peaks will bend over in soft curls.

Stiff-peak-stage egg whites: Use caution; this stage if reached quickly. With continue beating, the foam becomes whiter still and forms stiff peaks that stand straight when beaters are removed. The whites now contain all of the air they are capable of holding.

Overbeaten egg whites: More beating will give the egg whites a dull, dry look and cause small cur-like flakes to appear. That means the whites are too rigid for folding and you’ll have to start over. Store the overbeaten whites in the refrigerator and add them to scrambled egg.
