Decided to finish the Ramen in the fridge since we may go for long holiday next week.

Deep fry the Ramen to make it crispy.

Soak mushroom for overnight so that i can cut them easily this early morning.

Rinse through some sprout. Sliced carrot.

Prepared mushroom powder with water, and some all-purpose flour.

Then i thought of maybe i should make it more fragrance with some fried garlic and shallots.

So i heat up the oil and start with the following sequence:

1. Fried the Ramen. Drained and put it aside

2. Fried shallots and garlic. Drained and put it aside

3. Fried/ Cook carrot, mushroom, sprout, each one by one. Add mushroom water and dash of salt. This will be the soup base

4. Scoop the soup base and store in a stock pot.

When ready to eat, just pour the soup base on the ramen and add some fried garlic/shallots.

Simple lunch that i prepare within 1 hour.

An enjoyable cooking session

Attended this one by JV kindy. Aunty Ming Choo prepared all the ingredients and what we need to do is just to roll some potato balls and see how she cooked them all.

She was that it will be always a-not-enough dish. True enough, not only kids, adults were all screaming for more!

They were all for vegetarian purposes but they were certainly the most tasty and creative vegetarian recipes I have ever tasted.

These recipes were meant for all seasons:

Potato balls

Ingredients

Potato

Flour

Water

Bread – cut into cubes (to coat on potatoes)

Deep fry oil

Method

- Brush and clean potato skin. Slash a few cuts on the surface of the potatoes.

- Cooked potatoes with dash of salt. Cool down. Then peel the skin.

- Mash the potatoes

- Shape potato into balls

- Prepare flour mixture separately

- Cut bread into small cubes

- Soak potato balls in flour mixture.

- Pressed bread cubes onto the surface of the potatoes balls. – Pressed hard so that the bread will remain in tact when frying

- Deep fry the potato. Remove from oil when the balls start to turn golden brown.

Tomato Soup

Ingredients

2 kg tomato

1 bowl water

Dash of salt

1 tsp of mushroom powder

Mixed herbs (optional)

Method

- Clean tomato skin. Slash a cross cuts on the surface of the tomatoes.

- Cooked tomatoes with water

- Add the rest of the ingredients to taste.

Angel Hair with  vegetarian oyster sauce

Ingredients

Sauce:

Basil leaves – cut into small pieces

Olive oil

“jiang you gao” (can be bought from Teik Ming) to taste

1 tsp Mushroom powder

1 tsp Thyme leaves / mixed herbs (optional)

Angel Hair spaghetti

Method

- Mix all of the above to prepare for the sauce

- Cooked spaghetti with hot water for 3 minutes.

- Mix the sauce onto the spaghetti

What to eat when your kids have Hand Foot Mouth disease?

Its obviously that your kids have hand foot mouth disease, they tend to loose their appetite while having fever, and then later they would be complaining about blister in their mouths that make them cant eat solids.

My experience as a mother who have 2 kids down with HFM before, and one of them had second attack after a year, tells me that they are actually quite easy to handle.

During the attack, take away solid, and replace with things like porridge or chinese cooked noodle. You can have some miso added to the porridge or noodle to add to the taste, but it”s only optional.

Get them with plenty of juicy fruits, but not citrus such as orange or even pineapple coz it hurts the ulcer in the mouth. Our kids settled with pears(especially), plums, apple juice, mangosteen. JV took around 5-6 servings per day!  Chinese pears that is very juicy is even one of the best!

So dont worry when your kids have hand foot mouth disease. It’s actually a kind of detox that will help you to redefine the food you eat, while at the same time you have time to explore those fruits that you have around!

Fruit Eating Session at Balik Pulau

Its nice to have Khay Gay and Tiffany and tiny Adelene to go for a durian feast in Balik Pulau.

Durian season has just arrived and its a much awaiting rendezvous for Khay Gay who is having a home coming here from Perth.

You cant find Durian in else where except here. And you cant find the best of the best durians here in Balik Pulau.

Some says it stinks. But its the ‘ stink’ taste  that make it so irrestibl… hmmmm… one after another. Cant help to stop.

Aware though, if you are diabetic. The most that you can consume will be one small durian. Not the whole durian, but a part of it.

Never seen how it looks like? here you go:

This one look a bit yellowish and usually the taste will be sweeter. This is Tiffany favourite. :)

YJ, Khay Gay and I settled for the our more favourable taste that came with a bit ‘bitter’. Not that bitter as compare to bitter gourd. Just a little bit of it. And that makes all the difference. We called this the “kampung durian” (literally means village durian).

Then we had some mangosteen. They are AWESOME too! You see, mangosteen and durian always go in pair. Cant go wrong with them. A MUST have!

You got to press opened the skin hard to get to eat the white flash. Taste: sweet and sour. More of sweetness and juicy. Most dont taste sour at all.

JE and JV had never had enough of these durian and mangosteen. yummy yummy!
