Swiss Veal Roast Recipe

Ingredients

1 2 1/2- to 3-pound veal leg sirloin roast

1 7 1/2-ounce can tomatoes, cut up

3/4 cup diced fully cooked ham

2 tbsp dry white wine

2 tbsp cornstarch

1/2 cup shredded process Swiss cheese (2 ounces)

Oven 325o

 

Method

Place meat, fat side up, on a rack in a shallow roasting pan. Insert a meat thermometer. Roast in a 325o oven for 1 1/4 to 1 3/4 hours or till thermometer registers 170o. Remove meat to a platter. Skim fat from pan juices, if necessary. Add undrained tomatoes, ham, wine, and dash pepper to [an juices. Combine cornstarch and 1/2 cup cold water; stir into tomato mixture. Cook and stir till thickened and bubbly. Cook and stir 1 to 2 minutes more. Add cheese; stir till melted. Serve with meat. Serves 8.
