Pork Loaf Recipe

Ingredients

2 beaten eggs

1 5 1/2-ounce can tomato juice

1/2 cup chopped onion

1 tsp salt

1 tsp Worcestershire sauce

1/2 tsp dried oregano, crushed

1/8 tsp pepper

1 1/2 pounds ground pork

2 tbsp brown sugar

1/2 tsp dry mustard

Oven 350o

 

Method

In a bowl combine eggs and 1/2 cup of the tomato juice; stir in bread crumbs, onion, salt, Worcestershire sauce, oregano, and pepper. Add ground pork mix thoroughly. Shaper meat into an 8x4-inch loaf shape and place in an 11x7x1 1/2 inch baking pan. Smooth the top. Bake in a 350o oven for 1 1/4 hours. Drain off hat. Combine brown sugar, dry mustard, and the remaining tomato juice (about 1 1/2 tablespoons); spread over top of meat loaf. Bake 10 minutes more. Makes 6 servings.
