Marinated Leg of Lamb Recipe |

You don't have to have a rotisserie to grill a leg of lamb. Just start with a boned piece of meat ---
Ingredients 1 5- to 6- pounds lamb 1/2 cup cooking oil 1/3 cup lemon juice 1/4 cup finely chopped onion 2 tablespoons finely snipped parsley 1 teaspoon salt 3/4 teaspoon dried basil, crushed 1/2 teaspoon dried thyme, crushed 1/4 teaspoon dried tarragon, crushed
Method Have your meatman bone the leg of lamb and slit the meat lengthwise so you can spread it flat on the grill like a thick steak. For marinade, in a bowl combine the oil, lemon juice, chopped onion, parsley, salt, basil, thyme, and tarragon. Place lamb in a large plastic bag set in a deep bowl. Pour lemon juice marinade over the lamb and close bag. refrigerate meat 4 to 6 hours, turning bag occasionally to coat lamb evenly with marinade.
Drain lamb, reserving marinade. Insert two long skewers through meat at right angles making a +, or place meat in a wire grill basket. (The skewers or grill basket make it easier to turn the meat and keep it from curling during cooking.)
To serve, place lamb on a carving board, removing the skewers or removing the basket. Cut lamb across the grain into thin slices. Serves 10.
Note: This marinade is equally good on a bone-in leg of lamb such as the one picture in the tip box at right.
