Lamb Shish Kebabs Recipe

Ingredients

3/4 cup chopped onion

1/3 cup lemon juice

3 tablespoons olive oil

1 teaspoon salt

3/4 teaspoon dried thyme, crushed

1/4 teaspoon pepper

1 1/2 pounds boneless lamb, cut into 1-inch pieces

12 large fresh mushrooms

2 medium green pepper, cut into 1 1/2-inch pieces

3 medium tomatoes, quartered

 

Method

For marinade, in a bowl combine onion, lemon juice, olive oil, salt, thyme, and pepper. Add meat. cover ad refrigerate several hours or overnight. Drain meat, reserving marinade. Pour some boiling water over mushrooms and green pepper in a bowl. Let stand 1 to 2 minutes; drain.

 

Thread meat on skewers alternately with tomatoes, green pepper, and mushrooms. Grill over medium coals about 25 minutes, brushing with marinade and turning skewers often. (For firm-cooked tomatoes, grill on separate skewers 8 to 10 minutes.) Serves 6.
