Shape 1 pound ground beef into four 1/2-inch thick patties. Panbroil, broil, or bake as directed below. Makes 4 servings.
To panbroil: Heat a heavy skillet till very hot. Sprinkle surface of skillet lightly with salt. Add patties. Cook over medium-high heat to desired doneness, turning once (allow about 6 minutes total time for rare; about 8 minutes for medium; about 10 minutes for well-done). Sprinkle both sides with salt and spattering.
To broil: Place patties on an unheated rack in a broiler pan. Broil 3 inches from heat to desired doneness, turning once (allow about 8 minutes total time for rare; about 10 minutes for medium; about 12 minutes for well-done). Sprinkle both sides with salt and pepper.
To bake: Place patties in 8x8x2-inch baking pan. Cover and bake in a 350o oven to desired doneness (allow about 20 - 25 minutes total time for rare; about 25 - 30 minutes for medium; about 30 - 35 minutes for well-done). Sprinkle both sides with salt and pepper.
