Cajun-Roasted Pork Tenderlions Recipe

Pork tenderloins are the leanest cuts of pork. Out marinade keeps it moist and flavorful.

 

Ingredients

1 teaspoon plus 1/4 teaspoon coarse (or Kosher) salt

1 clove garlic

3/4 cup cooked fresh (or frozen, thawed) corn kernels

2 medium tomatoes, seeded and finely diced (about 1 1/2 cups)

3 tablespoons minced fresh cilantro

1 tablespoon freshly squeezed lime juice

1 tablespoon cider vinegar

3 tablespoons plus 1 teaspoon salt-free Cajun seasoning, divided

2(12-ounce) pork tenderloins

vegetable cooking spray

 

Method

Combine 1/4 teaspoon salt and garlic in a medium bowl; crush together with back of a spoon or pestle until mixture forms a paste. Stir in corn, tomatoes, cilantro, lime juice, cider vinegar, and 1 teaspoon Cajun seasoning; cover and let stand 1 to 2 hours, stirring occasionally.

 

Combine remaining coarse salt and 3 tablespoons Cajun seasoning; rub tenderloins all over with mixture. Cover and let stand at room temperature 30 minutes.

 

Preheat oven to 400o. Coat a large nonstick skillet with cooking spray; heat over high heat. Brown tenderloins well on all sides (about 5 to 7 minutes total). Transfer to a rack in a roasting pan; roast at 400o for 12 to 15 minutes or until internal temperature reached 160o.

 

Let stand 5 minutes before carving into thin slices. Serve with corn mixture.
