Braised Pork Steaks Recipe

Ingredients

4 pork shoulder blade steaks, cut 1/2 inch thick (2 to 2 1/2 pounds)

1/2 cup tomato sauce

1/4 tsp ground sage

 

Method

Trim excess fat from steaks; in a large skillet cook fat trimmings till 2 tablespoons fat accumulate. Discard trimmings. Brown 2 steaks slowly on each side in hot fat; remove steaks. Repeat with remaining 2 steaks. Drain off excess fat. Return all steaks to skillet. Season with salt and pepper. Add tomato sauce and sage. Cover tightly; cook over low heat for 30 to 35 minutes or till meat is tender. Skim excess fat from juices. If necessary, cook down juices to thicken slightly; spoon over meat. Makes 4 servings.
